Where I can hunt them?
I know there is 1 golden and 2 silver in early quest for New Hope and bunch of them when hunting with tribals but Chef asked me not to skin them so share will be fair.

Is there any place I can fight them? I have never encountered them on map and they would make nice non-barter char caps for my next build.

You can encounter them while traveling through the worldmap. They appear around New Hope and in some other areas (I don't remember where exactly).

Odd, i patrolled whole north half of map and still did not encouter them...

You can also go on hunting trips with the Albuquerque tribals.

That's pretty obvious, since you won't get gecko skinning perk until going with them on hunt at least once.

But it is part of quest, not stable way to earn cash and xp.
